To unlock different Yoshi colors (and Shy Guy colors) in Mario Kart 8, you need to scan amiibo figures of those specific characters. Scanning a Yoshi amiibo unlocks the Yoshi color that corresponds to the amiibo's design, and similarly, scanning a Shy Guy amiibo unlocks its corresponding color. Each scan unlocks only one color variant.
