Some versions have exclusives, where you get to battle a pokemon before the other one (like in silver, you get to battle Lugia before Ho-oh). There are also third versions (i.e Yellow, Crystal, Emerald, Platinum) which introduce enhanced graphics, sound, and sometimes new gameplay. The only difference is the coloring; shiny Pokémon are not more powerful.
Some shinies are a completely different color to normal, while some only have small coloring changes. Shiny Pokémon are extremely rare - every time you encounter a Pokémon there is a 1 in 4096 chance it will be shiny (1/8192 in Generations 1-5). Finally, the "PokéHome Profile" basically uses the same colors as "SwSh Profile", except for the lightest color, which is based on the background for its attacks.

That said, this is based on the Mobile (Android) version, as the Switch version doesn't use any different colors. In gen 4 this is done with gen 2 etcetera. It was either Yellow version or second generation. Was original Pokémon Red in color? Pokemon Red did NOT have a colour pallete on the GBC.
What it did have, however, was a "default pallete" that the GBC would go to when the game booted up. In the international versions of Pokémon Yellow for Nintendo 3DS 's Virtual Console, Jynx has a color palette with purple skin, owing to the controversies surrounding this Pokémon, instead of the black.
