Ultra Ego (我儘 わがまま の 極意 ごくい Wagamama no Goku'i, lit. "The Secret of the Self-indulgent") is a powerful divine transformation used by Vegeta that utilizes the Ultra Ego ability and the power of destruction. [5][6].

Usually whenever a new form is unveiled the antagonist goes "What is this form? Yellow hair?" or "Your hair is blue now?" Granolah doesn't feel the need to comment cause Vegeta's hair color hasn't changed, just like Ultra Instinct Sign. Ever since Vegeta's Ultra Ego form debuted in the black-and-white pages Dragon Ball Super, fans have been speculating about what color scheme this transformation will follow. Now, new art has revealed the official look, just ahead of Jump Festa 2022.

Black hair wouldn't fit Vegeta in this form due to it being implied by Beerus to be similar to UI. Since Goku had white hair, it's logical that Vegeta would have purple hair. The mangaka posted an illustration in which Goku Ultra Instinct, Granolah, and Vegeta Ultra Ego are in the chibi version.

Justs like goku's hair was black with a bit of silver on ultra instinct sign. I think vegeta got the unmastered version of ultra ego. Vegeta's ultra ego hair and goku's ui sign hair are the same in the manga.

Goku specifically didn't mention a hair color in the most recent chapter when referring to the form so it makes me think it is black with purple shading to symbolize Vegeta not mastering the form and the complete form will have purple hair.
