Vegeta's hair, like Goku's, changes color based on his ki for various transformations. It has ranged from yellow to blue, though when not powered up it is black. Now, he has a new hair - and pupil - color for Ultra Ego.

I've seen a lot of fan art of Vegeta's new form being purple, based on the anime's look on the gods of destruction. The energy around Vegeta might be purple, or maybe like fire.

The manga isn't really clear about the aura's color so idk. The reason I think his hair is still black is the fact that Granolah doesn't comment on his hair color. Usually whenever a new form is unveiled.
