Its pretty much just aesthetics. Yellow/White seems to be the basic, default ki color. In general, light colored ki is used by good ki users and Dark colored ki is used by evil people, but that's not a rule and it varies.
If you want my opinion, since attitude and temperament affects ki, then that could be used to change the ki colors. In the manga, all Namekians have patches in this color, regardless of age. The anime has introduced a distinction here - youthful Namekians and ones in their prime have pink patches instead, while middle-aged and elderly ones retain the manga's original yellow patches.
They've been turned from a common feature to a sign of aging.
