This Venom is still large and imposing, though some readers may miss the black. In the movie, probably but it wasn't explained. My best guess is that red means that it's bonded to Cletus's blood which might make it more dangerous.
If there is a hierarchy, I guess black like Venom are civilians or just a really low rank, grey like Riot are captains or general and red like Carnage are hunters or berserkers among the race. McFarlane's Venom from the 90's was the best. The blue contrast really showed off his drawing style and the character design.

The blue and purple is just used to show parts where light is hitting him. Comics have always used blues and purples to show highlights on black characters. The color is just a way to dumb it down in the movies.
Carnage is strong because he was with a serial killer who was a good match.
