These original colors for Vegeta's outfit actually always looked fairly great! 🔥🔥🔥 Now, as for the color of his hair, I actually once saw this fan headcanon that I personally believe perfectly explains why his hair looks black in certain illustrations and why it looks like a dark brown/dark reddish brown/dark red in certain others. Vegeta's hair, like Goku's, changes color based on his ki for various transformations. It has ranged from yellow to blue, though when not powered up it is black.

Now, he has a new hair - and pupil - color for Ultra Ego. While the regular art makes his hair appear almost all black thanks to the monochrome style, the Jump Festa art shown in multiple posts from Kami Sama Explorer suggests it's. Vegeta's main color's in the show are blue, grey, and gold with occasionally black.
In almost every season, you would see him in one or all of those three main colors. In the anime he's been shown with brown hair. In the officially colored manga for the saiyan and Namek sagas it's very apparently black.
