Don't use a kitchen knife. Go out to Lowe's/home depot/hobby lobby/Michaels, and pickup one of those cheap 'pumpkin stencil kits' that come with the stencils, and the tools glued to the front cover. Those cheap looking tools with the serated blades actually work really well for carving.
Sometimes I take a tin snips tool, and I snip off the ends of those cheap tools, to create a sharper edge.
