Vegeta Ki Blast Color
A simple ki blast are used to distract, basic damage, or randomly used (Vegeta ect.). I notice most of Goku attacks are blueish white. This is to show his pure of heart.
His main attack the kamehameha is whitish. As others here state its just artistic expression, ive always likened the ki blast colors to auras and alignment. Blue, white, and yellow are typically more focused and pure while reds and purples are normally more aggressive and chaotic in nature, regardless of power level.

Power would more so effect the size and intensity of the blasts and auras. Ki Blasts (気砲Kihō, lit. "Energy Gun") are formed and discharged portions of ki, which are frequently used in the Dragon Ball franchise for fighting.
The most frequently referenced and iconic Ki Blast in the series is the Kamehameha, as it is Goku 's favorite finishing move. Most ki blasts during the saiyan arc of the full color manga were yellow, the heroes had yellow ki blasts and even Raditz, Nappa and Vegeta had yellow ki blasts despite being villans. I think this, in universe, is why Ki changes color. Vegeta went from having an evil heart, his Ki being purple, to being bad, but less for the sake of evil and more for his own self interests, his Ki was white, to finally being a good guy, his Ki turning blue. Why Vegeta's attacks changes to purple to blue, than yellow? Yellow Ki attacks generally applies to super sayian, but we can see a lot of times how much the attacks disregard that.
