Eren Eye Color Manga
Manga purely has different "official" colors. In the anime, Eren's eyes are turquoise. They can either look green or blue depending on the lighting.
Anime seems to take that literally and in scenes such as when characters are displaying anger or renewed vigor, their eye color changes. In the case of Eren, it seems to change from green to teal. No idea about the Founding eyes.

But Eren has had this weird shine in the manga when (anime spoilers) manipulating Grisha. Eren has teal/green eyes in the anime &merchandise, gold/yellow in the chuugakkou, and grey in the manga. It's not just his eyes that's different in different media but his hair too (dark brown in the anime but black in the manga).
So, after watching the Anime, I noticed that all the people, who inherited the power of the Founding Titan, eye's change from their original colour to a brilliant purple colour, whether they be royal blood or not, as evidence of Grisha Jaeger. It should noted that the holder's eyes change colour almost immediately after consuming the previous holder, as evidence by Grisha again and Frieda. It can represent freedom, hope, and power.
