Common elements like spider logo, hand guards, eyes and trim changes affect all variants. Unfortunately, you cannot switch from Anti-Venom back to black Symbiote tendrils in Spider-Man 2 once you lose the Symbiote suit in the story. While you get to keep your Symbiote abilities through a later mission, their typical black gooey appearance is replaced with a white color scheme to match Peter's Anti.
For the powers you can, go to your menu, abilities and you can change between spider arm, symbiote and anti-venom powers. You can't use the black suit from the main story but there is the other black suit still available if you prefer. You can change the color of your symbiote ability via GAMEPLAY settings, found at the bottom of the list under TENDRIL COLORS.

The options are currently: BLACK: Change the symbiote to traditional black tendrils WHITE: Change the symbiote to anti-venom white STORY: Changes occur as the story changes These options become available after completing the main story. The Tendrils show up whenever you use Peter's Symbiote or Anti-Venom abilities. Before the update, the color of these abilities was governed by the story's progress.
Insomniac's major Spider-Man 2 update brought a wealth of new features to the game, including being able to change Peter's symbiote color. The Anti-Venom suit is the only variation you can acquire as you progress through the story. While it's technically not the exact same suit as the beloved Venom attire, it's the next best thing.
