I think this is because he was once evil and now he's good. Mixing himself into the middle causing yellow ki blast. Yamcha, Krillin, and Tien all have yellow ki mostly.
Each was once evil but now is good. I hold Cell as an exception of this rule as he's a mix. These changes turned Piccolo's blood green.

A fact that points towards this color change being a blunder is that Piccolo's blood is recolored to purple in the first episode of Dragon Ball Kai, during the recap of the 23rd Tenkaichi Budoukai. This screenshot is from Piccolo's reaction when Goku headbutts him. The transformation changes the colour of Piccolo's skin from green to a slightly lighter shade of green, and removes the lines from his arms.
We also see his ki briefly flash yellow in a similar fashion to the way the Saiyan's aura turns golden when they transform. The Dragon Ball Super manga finally explains the mystery of Orange Piccolo and the source of this transformation's incredible power: God Ki. I was rewatching DBS Super Heroes and I noticed that his arms were tan, not pink, even before his power was awakened.
