Yes. You can mix animals that don't have interspecies enrichment. The only consequence is they don't gain extra enrichment from mixing them.
As long as their needs are met, their welfare will be fine. The compatibility charts mentioned are indeed a good start to deciding what species you would like to mix in your zoo. The operative part being your zoo.

Data is sourced from Villanelle's Planet Zoo Data Chest. I managed to mix Capuchins, Anteaters, Giant Otters, Dwarf Caimans and Tapirs in one big habitat. You can optionally replace the Capuchins with Jaguars, since thats the only predation that seemed to occur.

What animals look best together, or at least make a decent amount of sense? I'm not discounting all animals from Africa. It's just the large African savannah animals (zebras, giraffes, antelopes, etc) that are too obvious.
I think. African elephant used to get a benefit from other african herbivores, but not anymore but you can put animals together, it helps if they like the same biome/plants, they just wont get a enrichment benefit. i like to put okapi and bongo together, indian rhino and indian peafowl, camel and gemsbok, pangolin and tortoises.

I understand you can mix any non-predator animals together, as long as their biome is the same. Interspecies-enrichment is a bonus for mixing certain species, not a barrier for mixing others.
