Enderman Minecraft Open Mouth
The enderman still displays aggravated behavior, shaking and screaming with its mouth open, and resumes its chase should the player stop looking at it. Moving within four blocks of a paralyzed enderman causes it to teleport away. When an Enderman is hostile, they open their mouths.
Though, even in creative mode I've seen them open their mouth seemingly for no reason. Unless that animation just carries out with all gamemodes, and they just don't attack you. Endermen open their mouths when they attack.

The texture under the Enderman's head in the enderman.png is its jaw. It IS fixed, his mouth opens into a dead world where there is no water, no glass, and you are unable to scream. It is why being eaten by an enderman is so scary.
