I think this, in universe, is why Ki changes color. Vegeta went from having an evil heart, his Ki being purple, to being bad, but less for the sake of evil and more for his own self interests, his Ki was white, to finally being a good guy, his Ki turning blue. Ki (気, "Ki", lit.

Most ki blasts during the saiyan arc of the full color manga were yellow, the heroes had yellow ki blasts and even Raditz, Nappa and Vegeta had yellow ki blasts despite being villans.
The first few episodes of the anime that depicted Vegeta were animated prior to his first colored appearance within the manga, and Toriyama had yet to give Toei Animation the color schemes for either him or Nappa. During his early cameo, debut, and filler appearances in the Dragon Ball Z anime, Vegeta originally appeared with a totally different color scheme from his usual one, being depicted with reddish-brown hair, a light green and orange armor with guard plates, a navy-blue jumpsuit, orange gloves and dark brown boots with orange uppers. This color palette reflects Vegeta's complex character, combining royal and fierce tones that symbolize his pride, strength, and battle experience.

What do you plan to use this color palette for? What makes people's Ki different colors? Goku's are almost always Blue or yellow. Vegeta even mixed it up with some purple. It seems like Goku's familys ultimate attacks are blue and Vegeta's side is yellow.

It has ranged from yellow to blue, though when not powered up it is black. Now, he has a new hair - and pupil - color for Ultra Ego. While the regular art makes his hair appear almost all black thanks to the monochrome style, the Jump Festa art shown in multiple posts from Kami Sama Explorer suggests it's.
A simple ki blast are used to distract, basic damage, or randomly used (Vegeta ect.). I notice most of Goku attacks are blueish white. This is to show his pure of heart.
His main attack the kamehameha is whitish.
